Spelt pancakes with apple and cinnamon compote
Ingredients for the waffles
- 1 cup spelt flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 tablespoon sugar
- 1 egg
- 1 cup of milk (or plant-based alternative)
- 2 tablespoons melted butter or vegetable oil
Ingredients for the apple and cinnamon compote:
- 3 apples, peeled, cored and cut into pieces
- 1/4 cup water
- 2 tablespoons sugar
- 1/2 teaspoon ground cinnamon
- A pinch of nutmeg
Instructions:
Prepare the pancakes: Mix the spelt flour, baking powder, salt and sugar in a bowl. In another bowl, whisk together the egg, milk and melted butter. Add the wet ingredients to the dry ingredients and mix until you have a smooth batter.
Bake the pancakes: Heat a frying pan over a medium heat and add a little oil. For each pancake, pour about 1/4 cup of batter into the pan and bake until golden brown, then turn.
Prepare the compote: Put the apples, water, sugar, cinnamon and nutmeg in a pan. Bring to the boil, then reduce the heat and simmer for 10-15 minutes until the apples are soft.
Serve: Place the pancakes on plates and top with the warm apple and cinnamon compote.
