Florentines – An Italian Treat Loved Worldwide
Florentines are delicate Italian cookies, cherished for their rich, nutty flavor and delightful texture. Impress your guests with this homemade recipe!
Ingredients:
- 1 oz finely ground spelt flour (use whole grain spelt flour)
- 2 oz unsalted butter
- 5 oz honey
- 1/2 cup heavy cream
- 9 oz skinless, coarsely ground almonds
- 2 oz finely chopped candied orange peel
- 3.5 oz dark chocolate
- 1 pinch of vanilla or ground cinnamon
Instructions:
- Prepare the Mixture:
- In a small saucepan, bring the cream and butter to a gentle boil.
- Add honey and stir until fully dissolved. Remove from heat.
- Combine Ingredients:
- Mix almonds, candied orange peel, and your choice of vanilla or cinnamon in a large bowl.
- Pour the warm cream mixture into the dry ingredients and stir until evenly combined.
- Shape and Bake:
- Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
- Drop teaspoon-sized portions of the mixture onto the sheet, spacing them well apart.
- Flatten slightly with the back of a spoon.
- Bake for 20–25 minutes, watching closely to avoid over-browning.
- Chocolate Coating:
- Allow cookies to cool completely.
- Melt dark chocolate in a double boiler (or microwave in short bursts, stirring in between).
- Brush the underside of each Florentine with melted chocolate and let it set.
