Apple pie: A classic with Salzburg flair

When the days get shorter, there is hardly anything better than baking a juicy apple pie. With the right ingredients, a pinch of love and a handful of freshly ground flour with a Salzburg grain mill, you can conjure up the perfect cake that tastes of childhood, home and coziness. Here you will find a simple recipe that is guaranteed to succeed.

Ingredients for One Apple Pie (9-inch Springform Pan):

For the Dough:

  • 2 cups all-purpose flour or spelt flour (preferably freshly milled using a Salzburg grain mill)
  • ⅔ cup (1 stick + 2 tbsp) cold butter, cut into pieces
  • ½ cup granulated sugar
  • 1 large egg
  • A pinch of salt

For the Filling:

  • 4–5 tart apples (such as Granny Smith or Honeycrisp)
  • Juice of half a lemon
  • ¼ cup granulated sugar
  • 1 tsp ground cinnamon
  • ¼ cup raisins (optional, soaked in rum)
  • ¼ cup ground almonds or hazelnuts

For the Topping:

  • ¾ cup heavy whipping cream
  • 2 large eggs
  • 1 tbsp vanilla sugar (or 1 tsp vanilla extract + 1 tbsp sugar)

Instructions:

1. Prepare the Shortcrust Pastry:

  • In a bowl, mix the flour, butter, sugar, egg, and salt by hand until a smooth dough forms. Do not over-knead; the dough should remain crumbly.
  • Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

2. Prepare the Apples:

  • Peel, core, and slice the apples thinly or chop into small pieces.
  • Toss the apple pieces with lemon juice to prevent browning.
  • Mix the apples with sugar, cinnamon, and, if desired, raisins and ground nuts.

3. Roll Out the Dough:

  • On a floured surface, roll the dough to fit a greased 9-inch springform pan. Create a rim about ¾ inch high.
  • Poke the base of the dough with a fork and sprinkle the ground nuts on top to absorb excess moisture from the filling.

4. Assemble and Pre-Bake:

  • Evenly distribute the prepared apple mixture on the dough.
  • Preheat the oven to 350°F (175°C).
  • Bake the pie for 20 minutes.

5. Prepare the Cream Topping:

  • While the pie bakes, whisk together the heavy cream, eggs, and vanilla sugar.

6. Finish Baking:

  • Remove the pre-baked pie from the oven and pour the cream topping evenly over the apples.
  • Return the pie to the oven and bake for another 30–40 minutes, or until the topping is set and the pie is golden brown.

Leave to cool and enjoy: Remove the cake from the oven and leave to cool in the tin. Serve lukewarm with a dollop of cream or a scoop of vanilla ice cream – a real treat!
