Rice patties with tomato sauce 🍅 Recipe

Ingredients

Rice Patties:

  • 280 g brown rice
  • 560 g water
  • 120 g mushrooms
  • 100 g leeks
  • 100 g carrots
  • 1 scant teaspoon full salt
  • 1/2 teaspoon Vitam

Tomato Sauce:

  • 100 g onions
  • 30 g cold-pressed olive oil or sunflower oil
  • 250 g fully ripe tomatoes
  • 1 heaped tablespoon fresh basil
  • 1/2 teaspoon full salt, white pepper, Vitam
  • 2 garlic cloves
  • 1 tablespoon tomato paste
  • 1 teaspoon maple syrup
  • 150 ml vegetable stock

Beer Batter:

  • 150 g fine whole wheat flour
  • 70 ml milk
  • 70 ml beer
  • 2 egg yolks
  • 2 egg whites
  • 3 tablespoons water
  • 1/2 teaspoon full salt
  • 250 g non-hydrogenated vegetable fat for frying

Side Dish:

  • 800 g chard (or spinach)
  • 40 g raisins
  • 50 g pine nuts or almonds
  • 30 g non-hydrogenated plant-based margarine
  • 40 g onions
  • Full salt, a little garlic, grated nutmeg

Preparation

Rice Patties: Cook the brown rice in water (1:1) for 1 ½ hours and let it steam. Do not add salt! Blanch finely diced vegetables in half a liter of salted water and drain. Important: Reserve the vegetable stock for the tomato sauce. Mix 2/3 of the rice with the vegetable cubes, coarsely purée the remaining third in a blender, and then add it. Season vigorously, form rolls, and let them cool. Fry in slices.

Tomato Sauce: Sweat finely chopped onions in olive oil. Briefly sauté with tomato paste and quartered tomatoes. Add vegetable stock and season with spices and fresh herbs.

Side Dish: Soak the raisins in 125 ml of water. Heat the butter and roast the pine nuts in it, add chopped onions, and sauté. Briefly blanch the chard, rinse with cold water, and season mildly. Finally, add the raisins and serve with the fried rice patties.
