Whole Grain Strawberry Rhubarb Cake

Ingredients

  • 2 cups freshly milled whole spelt flour or whole wheat flour
  • 7 tbsp butter, softened
  • ½ cup cane sugar
  • 2 eggs
  • ⅔ cup plain yogurt
  • 2 tsp baking powder
  • 1 pinch salt
  • 1 cup rhubarb, chopped
  • 1 cup strawberries, chopped
  • Optional: 2 tbsp chopped nuts or almonds

Preparation

Preheat the oven to 350°F. Cream the butter and sugar together, then beat in the eggs one at a time. Add the yogurt.

In a separate bowl, mix the flour, baking powder, and salt. Stir the dry ingredients briefly into the wet ingredients. Fold in the rhubarb and strawberries.

Pour into a greased cake pan and bake for 40–45 minutes, or until a toothpick comes out clean.

Freshly milled spelt flour gives this cake a naturally nutty, wholesome flavor.
